Nobu Talks Chicago, Peruvian Influences and Bluefin Tuna


Before last week’s Nobu United Dinner, I got to sit down with Nobu Matsuhisa, which is kind of newsworthy in itself, considering the man is on the road 10 months per year. We talked about his upcoming hotel and restaurant in Chicago (slated for late 2014), what he likes about the city, and the state of bluefin tuna; more precisely, why he continues to sell it at his restaurants.
