Chicago has always been the Candy Capital of the U.S., touting its Mars, Jelly Belly and Tootsie Roll roots, but the sweets industry – including some top talent from the pastry chef ranks – is coming together in two weeks, for the Chicago Fine Chocolate & Dessert Show, Oct. 18 – 20. Among the highlights at this year’s show:

 

Demonstrations and seminars on everything you ever wanted to learn about working with chocolate, from some of the top talent in the region. Top Chef Just Desserts Contestant Malika Ameen (By M Desserts), Geneva’s Allain Roby and the French Pastry School’s Sébastien Canonne (among other FPS instructors) will discuss issues ranging from small batch chocolate making from bean to bar, leveraging and creating trends, sustainability in chocolate, the lifecycle of chocolate from the farm to table and more.

 

There’ll be a Chocolate Carnival with Chef Patrick Fahy (Sixteen at the Trump Chicago) who is pulling out all the stops with a carnival-themed booth featuring everything chocolate, from chocolate cotton candy to chocolate funnel cake.

 

Learn to Make Chocolate Favorites with French Pastry School Elite: The renowned school’s instructors will once again return to take the demonstration stage with step-by-step instructions on how to make professional quality desserts.
