The “King of Porc” Hails From Chicago
ASPEN, CO – In what is surely the most anticipated orgy of all things porcine, this year’s Grand Cochon in Aspen proved exciting (and damn delicious), right up until the final chicharon, with Chicago’s Jason Vincent of Nightwood taking home the crown (literally).
The annual event is the culmination of a nationwide tour, whittling down the finalists to 10 chefs from 10 cities. Vincent had some serious competition, in the form of Boston’s Jamie Bissonnette (Coppa), NYC’s Marc Forgione (Restaurant Marc Forgione), L.A.’s Ben Ford (Ford’s Filling Station) and Miami’s Michelle Bernstein (Michy’s).
Vincent was up until midnight the night before, prepping, and came in early on Sunday with his crew to get cooking. For all of the details and some behind-the-scenes action, check out my exclusive video here with Chicago’s King of Porc.
