Nobu – Caesars Palace

Yes, all of the familiar dishes are here: the hamachi jalapeño, the miso black cod and of course, the assortment of tiraditos inspired by Nobu’s time in Peru. And while there is an older version of his namesake at the Hard Rock, the newer one at Caesars is a gigantic sushi-laden homage to the master, replete with a couple of teppanyaki stations and a massive hot kitchen as well. Tucked into the first floor of his namesake hotel-within-a-hotel (yes, there is a Nobu Hotel that has taken over one of the defunct towers at Caesars), the prices are steep, but this being Vegas, you won’t think twice when you throw down an extra hundred or so for that rare bottle of junmai daiginjo sake, will you?
