D’Artagnan Doing Meaty, Gamey, Foie-Filled Dinner at Intro
D’Artagnan has defined the farm-to-table movement since 1985, when Ariane Daguin bought into a duck farm. In fact, she sort of started it by providing chefs with high-quality game meats like rabbit, buffalo, and of course, duck. Fast forward 30 years, and D’Artagnan now provides the nation’s most well-regarded restaurants with organically raised meats in addition to foie gras, pâtés, and terrines.
Intro, Lettuce Entertain You’s residence chef series restaurant, hosts Daguin on Monday, October 26th, for a five-course meal featuring the D’Artagnan-only proteins. Current resident chef Aaron Martinez (Chef de Cuisine at the 25-seat and two Michelin star Commis in Oakland, CA) cooks the first course, while L.A.-based Stephen Gillanders, next up in the rotation, works on a honeyed foie gras dessert. Representing Chicago, Mike Sheerin, Doug Psaltis, and David Posey create dishes two, three and four. Paired wines stem from the vineyards and selections of Michel Chapoutier.
