Chicago-based chef Shawn McClain has established himself with such restaurants as Spring and Green Zebra, but this Vegas original (inside the Aria Resort & Casino) combines seriously delicious food served in a tastefully-appointed room with a very Midwestern sensibility (that is, it’s fine for gourmands as well as the average Joe). Wagyu beef tartar and foie brûlée are among his finest achievements here.
