Trencherman Hosting Arami For One Night

Kyuoucho is the Japanese word for collaboration, and on Monday, July 22nd, the kitchen at Trenchermen welcomes the staff from Arami, to create a unique brand of kyuoucho that hasn’t been seen in Wicker Park before. If you haven’t been to either restaurant, this is a good opportunity to taste each one’s highlights in one sitting.

 

Starting at 6:30 p.m., guests will be treated to cocktails and passed small bites. Trenchermen’s ambitious bar will feature sake cocktails to go with their “pickle tots” – a compact bite that has become as synonymous with the Wicker Park restaurant as Arami’s popular spicy tako springroll has with the popular Ukrainian Village sushi temple.

 

Dinner starts around 7 p.m., with six courses; each kitchen will create and serve three apiece. Likely candidates include: smoked and pickled mackerel; fried chicken and brown rice; Donburi, crispy crepe and probably some Japanese blue fin tuna from Tsukiji Market in Tokyo.

 

Arami will be bringing its tokubetsu junmai sake, which was created by the Ohmuraya Brewery in Shizuoka Prefecture of Japan. Pairings with each course will include Japanese whiskey as well.

 

The Bar

Beginning around 8:30 p.m., both restaurants will have a collaborative menu available for tasting, if you don’t want to stay for the entire dinner. Prices will vary from $5 to $13, including snacks and hearty small plates. Scottie McNiece of Uncanned Music has been procuring a playlist of Japanese surf rock (on vinyl) for this night only. It will be a casual Monday night at the bar for anyone who wants to drop by.  Bar snacks will include:

 

– Hand Rolled Maki (spicy octopus, salmon skin)

– Scallop Cake (yuzu, togarashi mayo)

– Duck Pastrami Ramen

– Composed Pickles (beets, cauliflower, cucumber)

– Green Beans (sea salt, sesame)

 

Dinner is $75 per person, not inclusive of tax and gratuity.
