Bayless’ New Restaurant Inspired by Fires of Baja

For more than 30 years, Rick Bayless has been Chicago’s ambassador for regional Mexican cooking. But his trio of successful restaurants in the city’s River North neighborhood wasn’t enough to contain his creativity. He now has two restaurants side-by-side: a casual brewery featuring Oaxacan tacos; the other, a more upmarket concept featuring a long wood-fired hearth, and an impressive lineup of mezcal.
