Giuseppe Tentori is a busy guy these days. The Trotter veteran continues to oversee his upscale Boka in Lincoln Park, as well as the more casual GT Fish & Oyster (in the former Tizi Melloul space) in River North. Tentori has a way with seafood, treating it with more reverence (and a tad more skill) than the “fish shack” joints we’ve been seeing lately at FishBar and New England Seafood Company. But that doesn’t mean it’s too precious either. I would be just as happy to sit at the bar, drink a Matilda, slurp a half dozen kusshis and order the shrimp bruschetta, which has the most unlikely ingredients (grapefruit, pistachios, pickled jalapeños and Baja shrimp) and yet makes a wonderful little bar snack.
