Milwaukee-born, Italian-trained, Chicago-experienced and now Vegas established Paul Bartolotta has created one of the most enduring restaurants in Vegas – located at The Wynn – due in part to his fanatical adherence to old world principals: get the best fish you can (in his case, from Italy), ship it overnight and then do as little as possible to it, either grilling, frying, roasting or sautéeing it. This is the most expensive seafood restaurant you’ll probably ever encounter, but it’s also the most unique and exquisite.
