Redfish For Two at The Dawson

There’s a reason you’ve never seen one tweet or Instagram post on my feeds from The Dawson, that hulking glass-and-concrete behemoth on the corner of Grand and Halsted. Why, you might ask? Because after two chefs, the food just never made an impression (the drinks, however, have always been solid). The third time seems to be the charm. A California-based chef has come into the fold, and while he stresses keeping things simpler, using as much as he can from his regional farmers, his Texas redfish for two is simply stunning. I loved how moist it was, full of flavor from both blackening spice and a rubdown of chipotle butter before and after grilling over American oak. Bring a friend. Hell, bring two friends. This is a meal for a hungry group, and it’s certainly Something You Should Eat™.
